What you really mean is Crete should open up to cater for the foreign ex-pats during the winter, not the tourists!
Tourists want to head off to either warmer climes, or classic winter snow orientated holidays. Even Greeks head off to their mountain resorts in winter, not Crete; which has its fair share of cold wet and windy.
I have friends who run one very popular taverna, they work 7 days a week all day, breakfast, lunch and dinner. If you turn up between lunch and dinner they are still happy to serve you with something.
Could you do that summer and winter, I couldn’t?
